Metal filters allow all of the oils and a little bit of sediment through. This gives the most body but it can mask some of the more subtle flavors. Drip and v60 filters stop a lot of the oils and all of the sediment so you get a much cleaner cup that is easier to distinguish different tastes. Thick chemex filters stop almost all oils, all sediment, and are purpose built to stop bitterness. This makes the cleanest cup available so you can really find the little flavor nuances in the beans. It also makes it much more forgiving of grind and brew time.
In addition to this, depending on how far and how hard you plunge, the Aeropress with paper filters lets out more oils into your drink than V60 and drip filters.
